As I am training a lot lately, I need to make sure that my intake of protein is at a good level. Especially as I have aching muscles after my sessions! I haven't quite had my nutrient levels right recently and have had my blood sugars go a bit haywire/getting bad headaches. I decided to do some research for me to get back on track once again.
As I was scrolling through I stumbled across this > 20 best healthy protein pancake recipes
I was shocked to see how many were on there; the different varieties, the ingredients that you could put into the mixture & the added bonus was it has all the nutritional values available.
I had a gander through all recipes, trying to see what I had in the cupboards to be able to actually make some pancakes!
I didn't have all the required ingredients for one particular mix... So I winged it!
My version of Healthy Protein Pancakes:
Ingredients For Batter:
> 1/2 scoop whey protein powder
> 3 eggs (I used them whole)
> splash of skimmed milk
> 1/4 litre porridge oats
** coconut oil for pan **
Add all ingredients into blender (I put them into my blender/smoothie maker) and whizz up until a batter consistency. That right there is your pancake mix ready to go.
Now to cook!
I use my little pancake pan for this. Makes the perfect size pancakes. Also a flipper thing (the thing you can see above - I don't know the technical term!) as if I tried to flip it in just the pan, id have it everywhere!!
Pop a bit of coconut oil into the pan, about the size of your index finger nail, wait for it to melt, swish around and pop in some of the batter to cover the bottom.
You don't need to put much in the pan as they puff up lovely.
Await for the side cooking to slightly brown, then flip over.
Repeat with the rest of the mixture.

The mix actually made four generous sized portions. I saved the other 2 for my Mr to have apon waking. He warmed them in the microwave and said they tasted good still.
I had my pancakes with peach slices. Yes, I know, out of a tin!! Not that healthy. But, I'm fast running out of fruit & need to get shopping!! Plus they were refreshing...
This for me was a great brunch washed down with a nice decaf cuppa tea.
These are the best tasting pancakes I've actually ever had. I enjoyed every bite!!
This is officially my new favourite food!!!

Protein Pancakes #1

Why? Well due to IIH originally; now I thrive on fitness & extreme events that TEAM FORTITUDE throw in my direction for charity.
